Tyrolean Kartoffelpuffer pancakes

Hotel Singer, like most other luxury hotels in the Austrian Alps, attaches great importance to fine cuisine as well as seasonal and regional ingredients. With us, innovation is just as important as tradition – as the following recipe for Tyrolean Kartoffelpuffer potato pancakes shows.
- 500g waxy potatoes
- 1 finely chopped onion
- 1 egg
- 1 tbsp flour
- Salt and pepper
- Oil for frying
And this is how you make the potato pancakes:
Peel the potatoes, grate coarsely with a cheese grater, and squeeze out any water with the help of a kitchen towel. Place the potato flakes in a bowl and mix with the egg, onion, flour, salt, and pepper. Heat a drizzle of oil in a shallow pan, add a handful of potato flakes, press down well with your spatula, and fry on both sides until golden brown.
How it tastes best
Kartoffelpuffer pancakes are delicious with applesauce, but also make the perfect side dish for any kind of meat.
Good to know
Leftover pancakes can be stored in the fridge or freezer and reheated in the oven at 200°C.
